It’s astonishing to think where many people who run coffee bars and roasteries originally came from. Some were lawyers, others bankers and many more come from the creative industries. I suppose the main reason may be that great coffee is something we can all agree upon, no matter the background.

The story of Chris Balz, co-owner of Hamburg’s newest specialty coffee shop, had a similarly interesting route to coffee. After spending many years working in various speakeasy bars in Berlin and spending a year in the Bavarian alps, he began his training at Roststätte Berlin where he learned all the ins and outs of running a successful coffee business.

“At first they only let me take on new tasks very gradually, but one day I suddenly became the manager of one of their stores. I was literally thrown into cold water,” Chris explained while preparing the order of one of his new regular customers.

When him and his sister Kathrin decided to open their own café, they wanted to do it somewhere that would still offer a great opportunity to open something unique and Hamburg became the obvious choice. While Berliners can hardly keep up with new coffee bars and roasteries, Hamburgers are discovering fine coffee at a much slower pace.

Balz & Balz, located close to Hoheluftchaussee, is warm and homely, with a large communal table in the first part of the room and a few individual tables at the back. Pretty much everything here is homemade and all dishes are prepared with beautiful ingredients. In particular breakfast favourites such as the Bircher Müsli look and taste fabulous.

When it comes to coffee, Chris works with different German roasters, never really settling on one in particular. He usually has two espressi on offer alongside a batch brew and freshly made pour overs on request.

“I am thinking about doing something like ‘Black Monday’ soon, a night when people can just come and try different coffees without milk or sugar. It would be an interesting way to let them discover coffee in its purest form, what do you think?” Chris asked while fulfilling an order of four cappuccini.

“I think it’s a great idea Chris!” I replied while finishing the last sip of my coffee.
