Meet the roasters from our May ’16 box

Meet the people behind the coffees from our monthly coffee boxes. This month: Tim Wendelboe, Belleville and Roestbar

In May we teamed up with three great roasters who provided some incredible, freshly roasted coffees for our latest box. Again, we had the pleasure to welcome three new partners on board who hail from different parts of Europe.

#1: Tim Wendelboe

Tim Wendelboe is somewhat of a superstar in the world of coffee. This former World Barista Champion has been at the forefront of the so-called ‘Oslo school of coffee’, and his name is associated with many progressive practices that have made his coffees some of the finest in the world.

He began his career as a barista at Stockfleths, a small specialty coffee chain in Oslo where he built his skills and knowledge. In 2004 he won the World Barista Championships in Trieste, Italy, and his career has experienced a meteoric ever since.

Opening his own roastery, coffee school and café in Oslo’s Grünerløkka in 2007 finally allowed him to dive into the world of specialty coffee at his own terms, pushing for increased trade transparency, building rock-solid relationships with his favourite farmers, and being able to educate his customers in the complexities of specialty coffee.

He has published a number of books, including ‘Coffee with Tim Wendelboe’ and his own account of Finca Tamana in Colombia, while also purchasing his own coffee farm in Colombia last year. A move that was seen as a logical step by many, and a real surprise by others.

He regularly publishes transparency reports to provide clarity on his Direct Trade coffee buying and his fine selection of coffee has found its way to all four corners of the world.

#2: Belleville

When you think of the French capital, your mind surely brings up images of the Eiffel Tower, the Mona Lisa and fancy Parisians sipping café lattes in quaint bistros. Does it not?

Indeed, for the longest time, specialty coffee was rather hard to find in Paris, but in recent years, a group of pioneering individuals have taken matters into their own hands, and have begun building a vibrant third wave coffee scene. One such company is Belleville Brûlerie.

Owned by American-born David Flynn and Frenchman Thomas Lehoux, Belleville began its history after Lehoux founded Ten Belles café near Canal St. Martin. Soon after, he was joined by Flynn and today its management team includes Jeff Marois, Albin Durand, Mihaela Iordache and Victor Terreyre Saint-Cast.

Belleville is widely regarded as one of the founding fathers of Paris’ fast growing specialty coffee scene and their coffees can be found in many of the capital’s fine coffee bars and as far away as Tehran, Iran.

Like most of our featured roasters, Belleville also engages in extensive Direct Trade practices, making sure that not only the farmers are paid way above market price for their best coffees, but also investing a significant proportion of their profits back into projects at origin. This ensures that Belleville can work closely with its select group of coffee producers to constantly improve output, knowledge and quality of life.

Frequently using the expression ‘sock water’ to describe their coffees, Belleville have always made sure their method of education is approachable, funny and easy to understand. Indeed, to many more traditional French coffee drinkers, Belleville’s finest coffees may taste just like sock water, but you can rest assured it will be the most delicious sock water you’ve ever enjoyed.

#3: Roestbar

Founded in one of Germany’s most pleasant cities, Münster, in 2003, Roestbar was probably one of the country’s very first specialty coffee businesses that engaged in direct trade with selected farmers.

Over the years, founders Sandra Götting und Mario Joka won many awards and prizes, and they were able to build a strong team that includes repeat German Barista Champion Erna Tosberg.

These days, Roestbar is synonymous with high quality specialty coffees even beyond the borders of its hometown. Their green coffee buyers regularly travel to origin countries to meet farmers, exchange knowledge and build long-lasting relationships in order to continuously produce even better coffees.

All of their coffees are roasted in a restored 1980 25kg Probat roaster, and the team ensures that each coffee is roasted to perfection to bring out the finest elements of each bean. Furthermore, Roestbar also maintains its own coffee school where it trains its own staff as well as aspiring baristas working for one of its many accounts.

Roestbar also supports a number of projects in various countries such as Lightray Uganda, an initiative that helps people in the the town of Gulu, northern Uganda, to get education, access to clean water and food, and basic medical care.
