If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.
🔧 Basic Brewing Setup – What You’ll Need
Before diving into the recipes, here’s what we recommend having on hand:
Precision scales (with or without timer)
Burr grinder (e.g. Comandante)
Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.
Freshly filtered or custom mineralized water (We use Lotus mineral drops and Apax Lab mineral concentrate drops)
Clean decanter or vessel
Pouring kettle (or regular kettle + steady hand)
Agitator or spoon for stirring
🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.
❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.
If you’re pulling espresso at home, we use the Profitec Pro600 and ProT64 grinder for consistent results.
📋 Brew Recipes – Filter & Espresso
☕ Guido
Filter (V60)
Coffee: 16g
Grind: Medium
Water: 250g @ 92°C
Steps:
0:00 – Bloom your coffee for 20 seconds using 50g of water and give your coffee a quick stir.
0:20 – Then, add 150 more grams in a steady pour.
0:40 – Add the remaining 100g and give the brewer a light tap.
- 2:15 – After the coffee has drained from the brewer, swirl your carafe and serve.
Espresso
Dose: 18g
Yield: 38 – 42g
Time: 28 seconds
☕ SO
Filter (V60)
Coffee: 15g
- Grind: Medium-fine
Water: 250g @ 96°C
Steps:
0:00 – Add 50g of water to your brewer to kick start the bloom.
0:45 – Add another 50g of water and wait for it to almost drain before continuing.
- 1:20 – Add the last 150 in one slow pour and let it drain completely.
Espresso
Dose: 18g
Yield: 41g
Time: 30 seconds
☕ Winok
Filter (Aeropress)
Coffee: 20g
- Grind: Medium-coarse
Water: 300g @ 95°C
Steps:
0:00 – Bloom with 100g of water for a 30 seconds. Ensure you swirl the Aeropress well.
0:30 – Add the remaining water and insert the plunger and start pressing. Stop when you hear the hissing sound.
Espresso
Dose: 19,5g
Yield: 50g
Time: 29 seconds
☕ Driftaway
Filter (V60)
Coffee: 15g
- Grind: Medium
Water: 250g @ 95°C
Steps:
0:00 – Add 50g of water to your brewer to start the bloom.
- 0:30 – Then add the remaining water in four quick consecutive pours.
- 1:05 – Finish pouring and then agitate the slurry to ensure all grounds are properly dislodged and extracted.
☕ Rise
Filter (V60)
Coffee: 15g
- Grind: Medium
Water: 250g @ 90°C
Steps:
0:00 – Start with a 30 second bloom using 70g of water.
0:30 – Pour up to 150g
- 1:00 – Add the remaining water and leave to extract without any further agitation.
☕ Calm:
Filter (V60)
Coffee: 15g
- Grind: Medium-coarse (decaf coffees prefer a coarser grind)
Water: 250g @ 94°C
Steps:
0:00 – Bloom with 30g of water for about 30 seconds.
0:30 – Then pour up to 150g
- 1:15 – Add the remaining 70g into your vessel and swirl the brewer lightly.
☕ Liquid Dream:
Filter (V60)
Coffee: 15g
- Grind: Medium-coarse
Water: 240g @ 92 – 94°C
Steps:
0:00 – Add around 30 – 50g of water to start your bloom.
- 0:30 – Brew at your own pace and preference.
