It’s time to say goodbye to Amsterdam!
As you might know, I’ve been busy closing a very important and special chapter in my life. After nearly 20 years in Amsterdam, I am moving to Barcelona later this month.
It still feels unreal but I am incredibly excited. It’s been a long time coming and I know, this move will be good for me and for The Coffeevine.
Kieran Lobo, my first hire, will be joining The Coffeevine team this month and be responsible for managing the warehouse and the monthly packing job.
I will introduce him in the coming days via social media and on our website! Thanks to him, I will be able to take care of many projects that have not gotten the right amount of attention.
It’s time to take The Coffeevine to the next level and these changes will help make this happen.
But for now, let’s dive headfirst into the August 2025 Coffeevine edition for which I picked out a bunch of delicious coffees from four talented Dutch roasters, two great Global roasters and one returning GEMS favourite.

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.
🔧 Basic Brewing Setup – What You’ll Need
Before diving into the recipes, here’s what I recommend having on hand:

Precision scales (with or without timer)

Burr grinder (e.g. Comandante)

Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

Freshly filtered or custom mineralized water (I use Lotus mineral drops – recipe coming soon!)

Clean decanter or vessel
-
Pouring kettle (or regular kettle + steady hand)
-
Agitator or spoon for stirring
🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.
❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.
If you’re pulling espresso at home, I use the Profitec Pro600 and ProT64 grinder for consistent results.
📋 Brew Recipes – Filter & Espresso
☕ Kolibri
Filter (V60)
-
Coffee: 15g
-
Grind: Medium-fine
-
Water: 240 @ 95°C
-
Steps:
-
0:00 – Pour 80g for a quick bloom
-
0:30 – Add another 80g in a circular motion
-
1:15 – Pour the remaining water in a flower motion (inside to outside)
-
Total brew time: ~2:30
-
Espresso
-
Dose: 18g
-
Yield: 38g
-
Time: 24 – 26 sec
☕ Manhattan
Filter (V60)
-
Coffee: 16g
- Grind: Medium-fine
-
Water: 264g @ 99 – 100°C
-
Double bloom:
-
0:00 – Pour 50g of water into the brewer in a slow swirling motion
-
0:30 – Add another 100g of water into the brewer making sure all the grounds are wet.
- 1:00 – Add another 50g to your brewer and repeat this process with the final 64g.
-
2:00 – Let drain completely and enjoy.

Espresso
-
Dose: 18g
-
Yield: 36-38g
-
Time: 28-30 sec
☕ Dagger
Filter (Aeropress)
-
Coffee: 17g
- Grind: Fine
-
Water: 250g @ 98°C
-
Steps:
-
0:00 – Add 250g of water to your Aeropress and put the lid on.
-
1:30 – Give your Aeropress one big swirl and flip on its head to start pressing down.
-
2:00 – Finish pressing and enjoy.

Espresso
-
Dose: 17,5g
-
Yield: 55g
-
Time: 28 sec
☕ UM Coffee
Filter (Origami Air S)
-
Coffee: 20g
- Grind: Medium-fine
-
Water: 300g @ 95°C
-
Steps:
-
0:00 – add 100g of water for a 40 second bloom
- 0:40 – add 100g in a slow circular motion
-
1:20 – Add a final 100g. Let drain completely and enjoy.

☕ Yardstick
Filter (V60)
-
Coffee: 15g
- Grind: Medium-fine
-
Water: 225g @ 94°C
-
Steps:
-
0:00 – Bloom for 35 seconds with 45g of water
-
0:45 – Add 55g of water.
- 1:20 – Add 55g of water.
-
1:55 – Add 75g of water at 88°C. Let drain and enjoy.

☕ Rose
Filter (V60)
-
Coffee: 16g
- Grind: Medium
-
Water: 250g @ 92°C
-
Steps:
-
0:00 – Bloom with 50g
-
0:40 – Add 100g in a slow circular motion
-
1:20 – Add the remaining 100g in the same way and let drain completely.
-
☕ Keen Coffee
Filter (Origami)
-
Coffee: 14g
- Grind: Medium-coarse
-
Water: 200g @ 90°C
-
Steps:
-
0:00 – Bloom with 100g
-
1:15 – Add the second 100g. Let drain and enjoy.
