December Brew Guide – Recipes From Our Roasters + Brewing Tips

T’is the end of the year. Goodbye 2025. Hello 2026!

What a crazy year it has been! I know I always say this. Is it because my life is just a bit crazy or because this year truly was crazy?

I mean, I did go through a breakup, sold my house and my business, and I moved to Barcelona. All in the space of 6 months.

But as we say in Spanish ‘todo lo que pasa, conviene’. There’s a good side to everything that happens.

I think it’s safe to say that some radical change can be good, especially when it rocks you out of your comfort zone. So, 3 months in, how is Barcelona treating me? Very well indeed!

This week, I will be back in Amsterdam to help Kieran pack the December shipment and then, I’m off to Mexico for my annual family gathering. I can’t wait! But before the holidays can begin, I want to share with you the

latest brew guide for the final Coffeevine edition of the year 2025. Are you ready to dive in?


☕ What’s in the December Coffeevine Box?

This month’s selection features some incredibly delicious lots from:

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.


🔧 Basic Brewing Setup – What You’ll Need

Before diving into the recipes, here’s what I recommend having on hand:

  • Precision scales (with or without timer)

  • Burr grinder (e.g. Comandante)

  • Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

  • Freshly filtered or custom mineralized water (I use Lotus mineral drops – recipe coming soon!)

  • Clean decanter or vessel

  • Pouring kettle (or regular kettle + steady hand)

  • Agitator or spoon for stirring

🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.

❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.

If you’re pulling espresso at home, I use the Profitec Pro600 and ProT64 grinder for consistent results.


📋 Brew Recipes – Filter & Espresso

☕ Sprout

Filter (Flat bottom brewer)

  • Coffee: 17g

  • Grind: Medium-course

  • Water: 250 @ 94°C

  • Steps:

    • 0:00 – Start your bloom with 50g of water.

    • 0:30 – When the bed is dry, add 100g of water in a slow circular motion, then swirl the brewer.

    • 1:10 – Continue pouring until you reach 250g. Let drain completely and enjoy.

Espresso

  • Dose: 20g

  • Yield: 36g

  • Time: 28 seconds


☕ Fjord

Filter (Flat bottom brewer – such as Next Level Pulsar)

  • Coffee: 20g

  • Grind: Medium
  • Water: 330g @ 93°C

  • Double bloom:

    • 0:00 – Add your coffee, and close the valve. Do use WDT (Weiss distribution technique tool usually used with espresso) before adding 50g of water for a 1 minute bloom.

    • 1:00 – Then add up to 200g of coffee, open the valve and give it a light swirl.

    • 1:45 – Top up to 330g and give it another swirl. Wait for total draw down.

Espresso

  • Dose: 20g

  • Yield: 46 – 48g

  • Time: 25 – 35 seconds


☕ Clever

Filter (V60)

  • Coffee: 14g

  • Grind: Medium-fine
  • Water: 200g @ 88°C

  • Steps:

    • 0:00 – Add 40g and bloom your coffee for 30 seconds.

    • 0:30 – Add 40g more

    • 1:00 – Add the remaining 120g of water in a single pour. Let drain completely.

Espresso

  • Dose: 18,5g

  • Yield: 50g

  • Time: 20 seconds


☕ Slick

Filter (V60)

  • Coffee: 20g

  • Grind: Medium
  • Water: 300g @ 93°C

  • Steps:

    • 0:00 – Start with a 60g bloom for 60 seconds.

    • 1:00 – Continue with 60g pours every 20 – 30 seconds. This recipe will result in clarity and sweetness.

☕ Leaves

Filter (V60)

  • Coffee: 13g

  • Grind: Medium-coarse
  • Water: 200g @ 90 – 93°C

  • Steps:

    • 0:00 – Pour 40g of water with a 5g per second speed and evenly draw a spiral pattern in the slurry.

    • 0:30 – Add 90g in the same pattern and speed.

    • 1:20 – Add the last remaining 70g in a central pour. Allow everything to draw down and swirl your vessel before pouring into a warmed up.


☕ SlowMov

Filter (Orea V4)

  • Coffee: 12,5g

  • Grind: Medium-coarse
  • Water: 205g @ 88°C

  • Steps:

    • 0:00 – Bloom with 45g for 35 seconds.

    • 0:35 – Add up to 105g of water in a central pour but making sure all of the coffee is properly wet.

    • 1:00 – Add the remaining water to reach 205g. Allow to drawdown and enjoy!
