The past few weeks have been a whirlwind. I’ve been in the process of dissolving the home Michal and I built together—sorting through memories, selling furniture, and preparing for a fresh start in Spain.

While it’s been emotional, it’s also been freeing. I’m heading to Barcelona light as a feather—with no excess baggage (emotional or physical).

But don’t worry—The Coffeevine is coming with me. A new workspace is ready, and I’m making all the arrangements to hit the ground running the moment I land.

Now, let’s focus on what you’re here for: this month’s epic lineup of coffees and recipes.

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.


🔧 Basic Brewing Setup – What You’ll Need

Before diving into the recipes, here’s what I recommend having on hand:

  • Precision scales (with or without timer)

  • Burr grinder (e.g. Comandante)

  • Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

  • Freshly filtered or custom mineralized water (I use Lotus mineral drops – recipe coming soon!)

  • Clean decanter or vessel

  • Pouring kettle (or regular kettle + steady hand)

  • Agitator or spoon for stirring

🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.

❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.

If you’re pulling espresso at home, I use the Profitec Pro600 and ProT64 grinder for consistent results.


📋 Brew Recipes – Filter & Espresso

☕ Nordbeans

Filter (April Brewer)

  • Coffee: 15g

  • Grind: Medium-fine

  • Water: 250g @ 96°C

  • Steps:

    • 0:00 – Pour 50g in circles

    • 0:30 – Pour 50g in the center

    • 1:00 – Pour 100g in circles

    • 1:45 – Final 50g in the center

    • Total brew time: ~3:00

Espresso

  • Dose: 16g

  • Yield: 50g

  • Time: 28 sec


☕ Standout Coffee

Filter (V60)

  • Coffee: 15g

  • Grind: Medium-fine
  • Water: 250g @ 93°C

  • Double bloom:

    • 0:00 – 50g

    • 0:40 – 50g

    • 1:00 – 150g (slow steady pour)

Espresso

  • Dose: 19g

  • Yield: 44–45g

  • Time: 22–24 sec


☕ HAYB

Filter (V60)

  • Coffee: 18g

  • Grind: Medium
  • Water: 300g @ 96°C

  • Water Profile: Low mineral water of 70-80ppm

  • Steps:

    • 0:00 – Bloom with 100g (40 sec)

    • 0:40 – Pour to 200g

    • 1:20 – Pour to 300g

Espresso

  • Dose: 18g

  • Yield: 45g

  • Time: 25-30 sec


☕ Apollon’s Gold

Filter (Origami/V60)

  • Coffee: 13.5g

  • Grind: Medium-fine
  • Water: 255g @ 95°C

  • Water Profile: Low mineral water of 100ppm
  • Steps:

    • 0:00 – Bloom with 40g (45 – 60 sec)

    • Pour the rest of your water in a slow circular motion.

    • Total brew time: ~4:00 – 4:30 minutes

☕ Traffic

Filter (V60)

  • Coffee: 20g

  • Grind: Medium
  • Water: 320g @ 95°C

  • Steps:

    • 0:00 – Bloom with 100g (1 minute)

    • 1:00 – Give the brewer an ascertive swirl and continue with 110g of water

    • 1:30 – Give it another swirl and continue with 110g of water again.

    • Total brew time: 3:30 minutes

☕ Native

Filter (V60)

  • Coffee: 15g

  • Grind: Medium
  • Water: 240g @ 91°C

  • Steps:

    • 0:00 – Bloom with 80g (45 sec)

    • 0:45 – Add another 80g.

    • 1:30 – Pour the remaining 80g. Let drain completely!


☕ A Matter Of Concrete

Filter (Orea V4)

  • Coffee: 16.5g

  • Grind: Medium-fine
  • Water: 250g @ 93°C

  • Steps:

    • 0:00 – Bloom with 40g @ 93°C

    • 0:30 – Pour 70g @ 88°C

    • 1:00 –  Repeat with 70g

    • 1:30 –  Repeat again with 70g – All the while, use a hypotrochoid flower pattern pour.
