Despite the customs scourge coming at us again this month — this time it was the US who inexplicably held up our shipment from Manifiesto in Argentina — we have overcome yet another challenge. We should keep track on our walls, like a prisoner counting the number of days they’ve been in jail. No, just kidding.

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.
🔧 Basic Brewing Setup – What You’ll Need
Before diving into the recipes, here’s what I recommend having on hand:

Precision scales (with or without timer)

Burr grinder (e.g. Comandante)

Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

Freshly filtered or custom mineralized water (I use Lotus mineral drops – recipe coming soon!)

Clean decanter or vessel
-
Pouring kettle (or regular kettle + steady hand)

Agitator or spoon for stirring
🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.
❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.
If you’re pulling espresso at home, I use the Profitec Pro600 and ProT64 grinder for consistent results.

Filter (V60)

Coffee: 15g

Grind: Medium-coarse (EK12)

Water: 260g @ 92°C

Steps:

0:00 – Start your bloom by pouring 60g of water into your brewer in a fast circular way, swirl.
-
0:40 – Pour up to 140g in a slow circular pour and gently swirl
-
1:00 – Continue up to 200g in the same way and gently swirl
- 1:20 – Finish by pouring up to 260g, again in a slow circular way and gently swirl at the end.

Espresso

Dose: 17,5g

Yield: 47g

Time: 19 seconds
☕ Obadiah
Filter (V60)

Coffee: 15g
- Grind: Medium

Water: 251g @ 94°C
-
Double bloom:
-
0:00 – Start with a 50g bloom, making sure all the grounds are wet
-
0:30 – Pour 100g of water into your brewer in a slow steady motion.
- 1:00 – Add the last 100g of water by pouring into the center of the brewer and then giving it a light tap to dislodge any grounds stuck to the walls. Let draw down completely.

☕ Tribute Torrefacteurs
Filter (Orea V4 porcelain)

Coffee: 15g
- Grind: Medium

Water: 255g @ 95°C

Steps:
The most important thing is to grind fresh the coffee and use water with low total hardness (Total hardness / ˂40 ppm CaCO3) and low alkalinity (Alk / ˂20 ppm CaCO3). We use a standard recipe with 3 pours.
Espresso

☕ Anecdote
Filter (V60 / Orea V4)

Coffee: 15g
- Grind: Medium

Water: 224g @ 92°C

Steps:

0:00 – Start with 45g and bloom for 35 seconds.
- 0:45 – Add 95g and pour in circular motion steadily
- 1:15 – Add the remaining 85g. Gently swirl 4 times.

☕ Manifiesto
Filter (V60)

Coffee: 20g
- Grind: Medium-coarse
-
Water: 260g @ 93°C

Steps:

0:00 – Start with a preinfusion with 80g for 30 seconds
-
0:30 – Add your next pour of 100g grams, keeping your flow rate steady and smooth
-
1:00 – Continue with the final pour, again using 100g and making sure your pouring finishes at 1:30 minutes.

☕ Les Révélations
Filter (V60)

Coffee: 20g
- Grind: Medium-coarse (decaf coffees prefer a coarser grind)

Water: 300g @ 90°C

Steps:

0:00 – Bloom with 60g for 30 seconds
-
0:30 – Then add the remaining water in one slow circular pour, making sure your grounds are always wet. Wait for the final drawdown and enjoy
