Today we’re happy to share with you the brew guide for our recently shipped August ’18 coffee box. These brew guides are written fresh every month to help our subscribers, customers and readers find inspiration while working with our carefully selected coffees, but these recipes are literally for everyone who comes across our website.

Basic setup:

As in any good kitchen or bar, you want to be sure to have a few key items at your disposal that will aid you in preparing a delicious cup of coffee.

These include:

  • Scales (with or without a timer – you can use your phone or your watch)
  • A good quality burr grinder such as the Comandante Grinder
  • Your favourite brew method (Kalita Wave, V60, Aeropress etc)
  • A clean vessel for brewing and decanting
  • Filtered water
  • A pouring kettle but a regular kettle will also do, however, it requires more precision

When working with whole beans, it’s crucial to make sure to always freshly grind your coffee just before preparation because it quickly loses its aroma and old coffee ends up tasting stale and hollow.

Recipe from Coffeevine founder Alex Kitain – Aeropress

“I love the Aeropress,” Alex said. “It’s so sturdy and usually my choice of coffee maker when I am on the road. It also produces a really yummy, full-bodied cup of coffee that works best with floral and acidic coffees, in my opinion.”

For this brew guide, he worked with the Burundian coffee from Kaffa Roastery, a super bright and clean coffee from Nkonga.

Use 14g of coffee ground pretty fine. I used a double filter, flushed them with hot water and prepared for the inverted method. Load your Aeropress then start the timer and add 220ml of freshly boiled water at 92°C. After 45 seconds, stir your coffee clockwise 3 times, then attach cap and continue brewing until 1:15 minutes. Then invert onto a clean vessel and push out until you hear the hissing sound. Extraction should finish at around 1:45 minutes.


La Cabra’s recipe for filter:

Aeropress: 16g of coffee ground medium. Add 210g of water at 92°. Brew time: 1:30 minutes.

La Cabra’s recipe for espresso:

18g of coffee ground fine. Extraction time: 30 seconds. Yield: 36g.

Outpost’s recipe for filter:

V60: 15g of coffee ground slightly more coarse (2-3 steps coarser). Add 50gr water and bloom for 30-35 seconds. Add 205g of water between 0:30-1:20 in a single pour (super slow low agitation pour) water temperature of 95° – 97°. Brew time: 2:10-2:30 minutes.

Outpost’s recipe for espresso:

No preinfusion (our espresso doesn’t much like preinfusion), if you can set your pump pressure, drop to 6 bar. water temperature 95° – 97°

Kaffa Roastery’s recipe for filter:

V60, 15g coffee ground medium fine. Total amount of water 250g. Water temperature should be around 93°. First, pour 60g and mix all the grounds with water. Let bloom for 30 sec. Pour another 60g and wait until 1:00min. Slowly pour rest of the water in rotating movements. Total brew time should be around 2:30.

Kaffa Roastery’s recipe for espresso:

he amount of coffee should be suitable for your machine’s basket size but the best ratio for this coffee is around 1:2,25. So for us that means that we use 18g of finely ground coffee and the yield is 40-42g in about 24-26 seconds. For domestic grinders longer brew time might be required to get the best out of this coffee.
