To fuel this, we have to start with the best possible coffee at our disposal. Delicious and freshly roasted by some outstanding roasters. Enjoy these carefully curated lots and brew the best possible coffee with this handy brew guide featuring recipes from our roasters.

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.
🔧 Basic Brewing Setup – What You’ll Need
Before diving into the recipes, here’s what I recommend having on hand:

Precision scales (with or without timer)

Burr grinder (e.g. Comandante)

Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

Freshly filtered or custom mineralized water (I use Lotus mineral drops – recipe coming soon!)

Clean decanter or vessel
-
Pouring kettle (or regular kettle + steady hand)
-
Agitator or spoon for stirring
🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.
❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.
If you’re pulling espresso at home, I use the Profitec Pro600 and ProT64 grinder for consistent results.
📋 Brew Recipes – Filter & Espresso
☕ Aliena
Filter (Flat bottom brewer)

Coffee: 16g
-
Grind: Medium
-
Water: 250 @ 93 – 94°C
-
Steps:
-
0:00 – Start your bloom with 40g of water poured evenly on the coffee bed.
-
0:30 – Now add another 50g to reach 90g in your vessel.
-
0:55 – Add another 50g to reach 140g.
- 1:20 – Repeat the same again
-
1:45 – Finish with the last 50g of water. Avoid heavy agitation. Pour and enjoy!

Espresso
-
Dose: 18g
-
Yield: 44g
-
Time: 28 seconds
☕ SUMO
Filter (Kalita or Orea)
-
Coffee: 15g
- Grind: Medium-coarse
-
Water: 250g @ 93 – 94°C
-
Double bloom:
-
0:00 – Add your coffee and kickstart the brewing process with 60g of water.
-
0:45 – Add your next 60g and repeat this one more time after 45 seconds.
- 2:15 – Finish with your final pour of 70g. Always allow the water to fully drain between pours.

Espresso
-
Dose: 18g
-
Yield: 40g
-
Time: 26 – 27 seconds
☕ 2:AM
Filter (V60)
-
Coffee: 15g
- Grind: Medium-coarse
-
Water: 250g @ 94°C
-
Steps:
-
0:00 – Bloom with 60g for 0:45 seconds
-
0:45 – Add up to 100g.
-
1:00 – Add up to 150g. Then, at 1:10, add another 50g, at 1:25 another 50g. Always allow to draw down.

Espresso
-
Dose: 18g
-
Yield: 36g
-
Time: 28 seconds
☕ Bluebird
Filter (V60)
-
Coffee: 20g
- Grind: Medium
-
Water: 300g @ 93°C
-
Steps:
-
0:00 – Start with 100g and bloom for 30 seconds.
- 1:00 – Continue with 100g.
-
1:30 – Finish with 100g. Make sure you employ the same pouring technique each time; 50g circular and 50g centre.

☕ Obscure
Filter (Hario Switch)
-
Coffee: 18g
- Grind: Medium-coarse
-
Water: 290g @ 94°C
-
Steps:
-
0:00 – Add water in a circular motion up to 54g to start your bloom, leaving the valve open.
-
0:30 – Add up to 108 in water in a slow circular motion.
-
1:00 – Close the valve and then add all of the remaining water up to 290g (Immersion).
- 2:00 – Open valve and let drain completely (Percolation).
-
☕ D stands for Decaf
Filter (V60)
-
Coffee: 15g
- Grind: Medium-coarse
-
Water: 225g @ 89°C
-
Steps:
-
0:00 – Bloom with 45g for 45 seconds.
-
0:45 – Continue with two pours, one up to 120g and the second up to 225g, leaving 30 seconds in between. Do not agitate the coffee as this will lead to clogging.
