This month’s selection features some truly delicious coffees from:

If you’re looking to brew with intent, these recipes will guide your hand and elevate your daily ritual.
🔧 Basic Brewing Setup – What You’ll Need
Before diving into the recipes, here’s what we recommend having on hand:

Precision scales (with or without timer)

Burr grinder (e.g. Comandante)

Your preferred brew method – V60, Origami, Kalita Wave, AeroPress, etc.

Freshly filtered or custom mineralized water (We use Lotus mineral drops and Apax Lab mineral drops)

Clean decanter or vessel
-
Pouring kettle (or regular kettle + steady hand)
-
Agitator or spoon for stirring
🔄 Tip: Always grind your coffee fresh before brewing for maximum aroma.
❄️ Storage Tip: Vacuum-seal in portions, label, and freeze if needed.
If you’re pulling espresso at home, we use the Profitec Pro600 and ProT64 grinder for consistent results.
📋 Brew Recipes – Filter & Espresso
☕ Newground
Filter (Flat bottom or Switch brewer)

Coffee: 15g
-
Grind: Medium
-
Water: 250g @ 99°C
-
Steps:
-
0:00 – Start your bloom by pouring 50g of water while making sure your coffee is entirely wet
-
0:30 – Continue with two even pours until you reach 200g or add in one pour if using a brewer with a valve
-
2:00 – Now either open the valve or let your brew drip through and then remove the brewer. Enjoy!

Espresso
-
Dose: 20g
-
Yield: 42g
-
Time: 28 seconds
☕ Sandbox
Filter (V60)
-
Coffee: 20g
- Grind: Medium-coarse
-
Water: 255g @ 94°C
-
Steps:
-
0:00 – Start with a 55g bloom
-
0:50 – Now, pour up to 150 pretty fast, making sure you get a bit of agitation in there.
- 1:25 – Add the remaining water in a steady pour. The extraction will usually finish at around 2:30 minutes.

Espresso
-
Dose: 18g
-
Yield: 54g
-
Time: 18 – 20 seconds
☕ Cayo
Filter (V60)
-
Coffee: 15g
- Grind: Medium
-
Water: 245g @ 94°C
-
Steps:
-
0:00 – Start with a 35g bloom into the middle of your coffee bed
-
0:35 – Continue with a slow steady pour in a circular motion to reach 155g
- 1:10 – Add your final pour in the same motion to reach 2:45g.

Espresso
-
Dose: 17,5g
-
Yield: 36g
-
Time: 18 seconds
☕ Enjoy
Filter (UFO/V60)
-
Coffee: 15g
- Grind: Medium-coarse
-
Water: 200g @ 92°C
-
Steps:
-
0:00 – Start with a bloom using 50g of water
- 0:40 – Continue with a slow circular pour up to 100g
-
1:10 – Add a bit of speed and pour up to 150g
- 1:40 – Finish with a slow pour down the middle
-
☕ Portebleue
Filter (Hario Switch)
-
Coffee: 20g
- Grind: Medium
-
Water: 320g @ 94°C
-
Steps:
-
0:00 – Start with a 30 second bloom using 50g of water with the valve closed
-
0:30 – Add up to 120g of water in a slow steady pour
-
1:00 – Open the valve and then add up to 220g of water
- 1:45 – Add the final pour of 100g of water in a slow circular motion. The total brew time will be around 2:30 minutes
-
☕ Calm:
Filter (V60)
-
Coffee: 15g
- Grind: Medium-coarse (decaf coffees prefer a coarser grind)
-
Water: 250g @ 90°C
-
Steps:
-
0:00 – Bloom with 30g for
-
0:30 – Continue with your pours, this time adding up to 150g.
- 1:00 – Add another pour, this time completing the required amount up to 250g.
