The Middle Kingdom, or China as it is commonly known today, is a vast land with more than 1.4 billion people. It’s sometimes hard to imagine such a magnitude and even harder to learn much about what happens in China these days. While the country is the world’s second largest economy, it is also largely lives within its own world, making it hard to access information or even interact with locals.
That China has a massive coffee scene is no secret though. In its main cities, you can find many specialty coffee roasters who are doing amazing work and buying up some of the world’s finest coffees. I’ve been wanting to work with a Chinese roaster for a long time and I’m excited to have finally found one who was keen to get involved with The Coffeevine and show what Chinese specialty coffee is all about.
Based in the city of Shanghai, Terraform Coffee was founded in 2018 and is part of a larger group but its focus is primarily on sourcing exceptional washed coffees from leading producers and roasting them to perfection before serving them to discerning local customers and the occasional foreign ones too.
I found their Instagram profile a few months ago and thought they’d be a great match for our Global roasters selection. They sent us a bunch of different coffees to cup at our public cupping in Utrecht recently and wow, they really stood out. Terraform roast their coffees on two different Loring roasting machines (S70 & S15) as well as a Probat UG22. The coffees are clean and delicious. Just like the universe intended for them to be.
To mark Terraform’s debut, they will be roasting and exceptionally tasty washed Honduran coffee from producer Oscar Ramírez who owns and runs the El Laurel farm together with his wife and sons. The coffee that we picked during our cupping is a beautiful Parainema variety with a super clean cup profile and notes of caramel, citrus and brown sugar.
